Celebrate Summer Saison!

Saisons were traditionally brewed in the autumn or winter for consumption during the late summer harvest. The refreshing ale was then stored until the late summer harvest. Because of the lack of potable water, the ale would give the farm hands the hydration they needed without the threat of illness.

The brew had to be strong to prevent spoilage during storage, but at the same time could not be so strong as to incapacitate the workers. These beers were strongly hopped, as hops act as a preservative. Saisons benefit from higher fermentation temperatures which makes this the perfect beer for your summertime brewing.

Not so long ago it was close to being an endangered style, but over recent years there’s been a massive revival; especially in the US. So join the revolution and brew your own Summer Saison with Wyeast Laboratories Private Collection.

Wyeast 3711 PC French Saison is a highly attenuative strain that will leave your beer with a silky and rich mouthfeel. Wyeast 3725 PC Biere De Garde is a low to moderate ester producer with a subtle spiciness. Finally, Wyeast 3726 PC Farmhouse Ale produces complex esters which are balanced with earthy and spicy notes.

French Saison
Produces saison or farmhouse style biers that are highly aromatic with clean, citrus-esters, peppery and spicy with no earthiness and low phenols. This strain enhances the use of spices and aroma hops, and is extremely attenuative but leaves an unexpected silky and rich mouthfeel in a very dry finished beer.

Bier de Garde
Low to moderate ester production with subtle spiciness. Malty and full on the palate with initial sweetness. Finishes dry and slightly tart. Ferments well with no sluggishness.

Wyeast 3726 PC
Farmhouse Ale
This strain produces complex esters balanced with earthy/spicy notes. Slightly tart and dry with a peppery finish. A perfect strain for farmhouse ales and saisons.
